3 Tips for Becoming the King of BBQ

Summer is in the air and the season of backyard BBQ is upon us! Before you arm yourself with the tongs and spatula, follow these 4 tips to surprise, delight, and entice your BBQ guests.

Professional chefs always spend time finding the perfect BBQ, reliable tools and the right charcoal for that nice, smoky flavour. Make sure your charcoal is good quality, lumpwood is a favorite of BBQ maestros.

Picking the right ingredients is the most important part of your preparation. Select good quality meat and fresh veggies. If you’re not sure what you’re looking for, try to work with a local butcher or a farmer at the Farmer’s’ Market who can help guide you.

Be Merry with the Marinade

While smoke provides that distinct, delicious BBQ flavour, it also threatens to overwhelm. Therefore, lovingly bathe your meat in a tasty marinade! Experts (like Chef Adair) also recommend reserving some of the sauce and carefully brushing it over the meat while cooking. The marinade will trap the moisture, smoke, and caramelize the meat.

Timing is Everything

Okay, ‘timing is everything’ might be an overstatement, however, there’s no doubt that patience is darn important. Before placing the meat on the BBQ, ensure that the flames have died down, you should be cooking over grey, glowing coals. These coals provide the hottest and most balanced heat.

Competing chefs use organic ingredients from local farmers and battle it out for the title of BBQ King. Visit each BBQ station and nibble on delicious barbecue bites, paired with tantalizing Similkameen wines. Once you’re done, cast your vote for the best wine and food pairing, and help crown the Similkameen BBQ King!

Early bird tickets are $80 before June 30, 2016, and $90 afterwards. Tickets for children and youth are also available, so bring the whole family!
