Osoyoos Chefs Take on Whistler’s Cornucopia Festival

Food, wine, and the gorgeous mountainside – what’s not to love at Whistler’s Cornucopia event, running from November 6th – 16th? The answer is not much. In fact, fans of Watermark Beach Resort will be thrilled to learn that Chef Adair has been invited to take part in Friday’s Osoyoos Wine Dinner at Quattro Whistler!

The evening’s culinary event showcases three talented chefs from our little corner of the the South Okanagan, a place that is known for its incredible wineries and delectable, fresh, local food. After all, great wine isn’t truly experienced without great food to match!

The Quattro Dinner will feature a four-course dinner designed by four executive chefs:

  • Jeremie Trottier of Quattro Whistler
  • Justin Paakkunainen of Walnut Beach Resort
  • Benedict Genaille of Spirit Ridge Vineyard Resort & Spa
  • And of course, our own Chef Adair Scott of Watermark Beach Resort

Each course is prepared by a single chef and paired with wines from a participating South Okanagan winery.

Curious about the menu and wine pairings for the evening? Don’t worry, Watermark Beach Resort has you covered! The event will start off with a bit of bubbly from Stoneboat Vineyards, with guests receiving a glass of their Piano Brut. Once you’ve had a chance to mingle with your fellow food and wine lovers, you will be seated and the evening will really begin.

First Course

Prosciutto-wrapped rabbit roll, wild chanterelle mushrooms, petit spinach, Fester’s Farm jingle bell peppers, radishes, pecorino cheese

Second Course

Okanagan raised Arctic char, Covert Farms butternut squash ravioli, smoked fingerling potatoes, pickled radish, tomato basil broth

Third Course

Slow braised Okanagan Valley beef short ribs, Harker’s Organics beets, celeriac puree, horseradish ‘salad’

There are a handful of tickets still available for the event and you can purchase them online or by calling 1-800-944-7853. Of course, if you can’t make it to Whistler to take in the sights, sounds, and flavours of the Cornucopia festival and the Osoyoos Quattro dinner, you can always come for a meal at Watermark Beach Resort’s Wine & Tapas Bar and experience Chef Adair’s culinary creations in-person!
